So you can do any of the quests or none of them. You can also do any of the side quests after the DLC or if for some reason the DLC locks you out of going back to the base game

Thesimple answer is Yes. All side quests, all areas of interest, which means completing all the ? on the map, all viewpoints, stone circles, tombs, papyri puzzles, Ptolemy statues etc. You'll also need to complete a Gladiator Arena, but it's part of the story anyway and I'm not sure about the Hippodrome, but I've at least done the first
